Tropical Fruit Tart


Custard diplomat

  • 200g instant custard
  • 100g whipped cream

Fruit salad

  • 4 strawberries
  • 1 mango
  • 1 passionfruit
  • 9 blueberries
  • 9 raspberries
  • 6 blackberries


  1. Pre-heat fan forced oven to 160°C.
  2. Place the Butter Shortbread Shells on a baking tray to thaw to room temperature - approximately 30 minutes.
  3. Place thawed Butter Shortbread Shells into pre-heated 160°C oven and bake for approximately 12-16 minutes, then set aside to cool.
  4. Prepare instant custard then fold in whipped cream until smooth.
  5. Pipe custard diplomat into pre-baked Butter Shortbread Shells to ¾ fill.
  6. Arrange fresh fruit on top.
  7. Glaze with clear gel, then place in the fridge/ cold room to set.
